Steak
- Not Another Cooking Show-esque, minus the parmesan cheese
- This is not a steak tutorial, however, refer to Gordon Ramsay’s steak tutorial here that taught me everything that I know!
- I bought 4 ribeyes from Costco for about $90, decent value
- Once I seared and basted the steaks, I rested them in a warm oven with garlic and thyme on top
- The steak turned out rarer than my liking, didn’t use thermometer
- Spicy Relish topping

- Chop cherry peppers and sautee in residual steak pan juices
Sweet Potato
The magic of this dish is in the small dice of the potato
- Peel and chop up Japanese sweet potato
- Cut into planks
- Cut planks into sticks
- Cut sticks into cubes
- Cut planks into sticks
- Cut into planks
- Olive oil, salt, pepper, smoked paprika, garlic powder
- Toss
- Roast 425 ~15 min
- Toss around and return to oven maybe 5 more minutes
Shallot Topping
- Slice shallot into rings
- Sautee in steak residue
- Layer atop the sweet potatoes
Brocollini
- Wash
- Steam in pan with lid closed ~5-10 min, add fresh smashed garlic about half way through
- Add oil, salt, pepper
- Sautee
- Put in serving dish, drizzle with chili crisp oil
